How to make Ice Cream Cookies with Royal Icing

Using ice cream cookies in an ice cream party is super simple.  You can bake them onto sticks and display them upright. You can set them out on platters or plates. You can also use them as cake toppers.

Ice Cream Cone Cookie Tutorial: STEP by STEP

Ready to learn how to make these fun and simple ice cream cookies?  Let’s walk through these step by step!

Materials:

 

Step 1:

You will need to start with a good sugar cookie recipe .  When I prep the dough, I always add additional flour so the cookies do not stick to the cutting surface. This also helps them bake wit less spread.

Once your dough is ready to start cutting, roll it out to about ¼ inch thick.  Thicker cookies will bake easier, decorate easier and hold more flavor.  If you are unsure of thickness, err on the side of thicker!

Preheat oven according to the recipe.  Line cookie sheets with parchment paper. Cut the cookies out with the ice cream cookie cutter and bake according to your recipe.

You will want the cookies to completely cool before decorating.  I usually like to bake them the day before I decorate.

 

Step 2:

Next you need to prepare your royal icing.  You will need a tan color and then your ice cream color and white icing.  For these cookies, I used light pink, but you can make any color or “flavor” of ice cream you want!

To color the icing, you will add drops of gel food coloring to your icing. Separate your icing into separate containers to mix with coloring and set aside sealed until you are ready to use them.  You don’t want the icing to dry out while you are using other colors.  

For tan, use a few drops of brown.  For pink, use a few drops of red or pink.  Mix well so your frosting isn’t streaky.

Add small amounts of water to each container and mix until you get the royal icing to the correct consistency. You will want the icing to be fill consistency or honey-like icing. Be careful not to add water too quickly. 

The runnier the icing, the easier to make it smooth, but be careful not to be too runny or you will have a hard time keeping lines clean.

Step 3:

Using your edible marker, draw on the wavy lines around the bottom of the ice cream scoop.  Then outline the top for the “sauce”.  It’s significantly easier to line with icing if you have a line to follow. 

Step 4:

Using the pink icing, Outline the top middle section of the ice cream scoop. This is the part between the bottom of the scoop (inside the wavy lines) and the line for “sauce” on top.  Fill in this section with pink icing.  Use a toothpick or fork prong to flatten out any imperfections and air bubbles.  

 

Next, using the tan icing, trace the bottom wavy line and the outline of the cone.  Fill in the cone with tan icing. Use a toothpick or fork prong to flatten out any imperfections and air bubbles.

Once the two sections of frosting are dry, fill in the section between the cone and the middle of the scoop with pink.  By letting the other sections dry first, this gives you a nice line between the colors and gives the scoop some definition.  Use a toothpick or fork prong to flatten out any imperfections and air bubbles.

Fill the top of the scoop in with white.  While the icing is still wet, gently drop sprinkles into the frosting.  The icing will dry with the sprinkles inside.  Use a toothpick or fork prong to flatten out any imperfections and air bubbles.

Step 5:

Once the tan icing is dry, use the brown edible marker to draw on waffle cone lines in a criss cross pattern.  Easy peasy and ready to eat!!

  • Royal icing. You can buy that mix or here is a great royal icing recipe to use!!  If you are new to cookie decorating, you also need a piping bag, icing tip 1/2, coupler, and clip.  I recommend this piping tip set.  It’s reasonably priced and includes everything you need.
  • Sprinkles
